Turkey Lasagna

1 pound ground Italian turkey sausage
8 ounces extra-wide dry lasagna noodles
8 ounces fresh mushrooms, sliced
4 cups canned tomato sauce
1-1/2 cups low fat cottage (2%)
2 large eggs
6 Tbsp freshly grated parmesan cheese
4 Tbsp parsley, freshly chopped
1 Tbsp Greek (mild) oregano leaves, dry
1 Tbsp sweet Basil leaves, dry
1 tsp garlic powder
1/2 Tbsp Morton Nature's Seasons seasoned salt
8 ounces part skim mozzarella cheese, grated

Cook lasagna noodles according to package directions;
drain and run under cold water. Set aside. Preheat oven to 350°F.
Spray a 9 x 13 inch baking dish with vegetable cooking spray and
set aside. Cook turkey sausage and mushrooms in a large skillet;
drain and return to skillet and add tomato sauce. Simmer slowly
while preparing filling ingredients.
In a large mixing bowl, combine cottage cheese, eggs, Parmesan
cheese, parsley, oregano, sweet basil, garlic powder, seasoned
salt and pepper. Mix thoroughly.
To assemble lasagna: Start with a layer of noodles, meat sauce,
cheese mixture, and mozzarella cheese. Repeat layers a second time.
Bake in 350°F oven for 45 to 60 minutes (check after minimum time),
or when cheese is lightly browned. Remove from oven and cool
10 to 15 minutes before serving. Makes 12 servings.

Turkey Roll-ups

2 flour tortillas
2 tsp mayonnaise
2 slices thinly sliced deli turkey
1/2 cup shredded lettuce
2 Tbsp shredded cheese, any type

Lay out tortillas. Spread with mayonnaise.
Layer turkey slice, lettuce and cheese onto tortillas.
Roll up and wrap. Makes 2 servings.

Tasty Turkey Loaf

1 egg, lightly beaten
1/4 c bread crumbs
1 Tbsp fresh basil or 1 tsp dry
2 Tbsp fresh parsley or 2 tsp dry
1 tsp Dijon-style mustard
1/4 tsp freshly ground black pepper
1/2 tsp poultry seasoning or sage
1 lb ground turkey
1/4 c chopped onion

Sauce:
1 tb low-fat yogurt
2 ts Dijon-style mustard

Combine egg, crumbs, seasonings.
Add turkey and onion, mix well.
Press evenly into ungreased 8 x 5 loaf pan.
Bake at 350 F for 35 minutes or until done.
Mix sauce ingredients and spread over top before serving.
Makes 5 servings.
