Potato Curry
Ingredients:
For Masala:
- 1 medium onion (finely chopped)
- 4 boiled potatos
- 1/2 cup peas (optional).
- 3/4 tsp. of garlic paste or 4 pieces garlic
- 3/4 tsp. of ginger paste or 1 inch piece ginger
- 3 to 4 green chillies
- 1/2 tsp. jeera powder (cumin powder)
- 1/2 tsp. coriander powder
- 1/2 cup of tomato sauce
- 1/4 tsp. of garam masala
- 1/4 tsp. of turmeric powder
- 1tsp. of heavy cream (or milk)
Method:
In a pan, heat little bit of oil or 3 tbl.sps of Ghee. Add chopped onion
and green chillies. Add garlic, ginger paste along with it. Fry it until it becomes
golden brown, then add turmeric, cumin, and coriander powder, and fry it for 2 more
minutes. Add tomato sauce and fry it for some more time. Allow the onion
masala to cool down a little bit before grinding it in a mixer. After grinding, place the
onion masala back into the pan and add 1/2 cup of water, cook the masala in a low flame,
add salt to it. In the mean time, boil the potato and peas, remove the potato skin and
dice it into cubes. Add the potato and peas into the curry, then add the garam
masala. Cook the potato curry for few more minutes in a low flame. In the end add 1tsp. of
heavy cream, mix it well, garnish it with coriander leaves.
