Russian Mints
2-1/4 cups chocolate chips 2 cups mini-marshmallows 1 cup butter, at room temperature 4 cups granulated sugar 10 ounces evaporated milk 1 teaspoon mint extract 3 cups chocolate-flavored candy coating
1. Combine the chocolate chips, marshmallows, and butter in a large bowl. Set aside. 2. Butter a 9 x 13 inch square pan. Set aside. 3. Combine the sugar and evaporated milk in a large heavy saucepan. Bring to a boil on HIGH heat. Reduce heat to MEDIUM and boil 10 minutes. Stir in the mint extract. 4. Pour this mixture over the marshmallows, chocolate chips, and butter in the bowl. Stir to blen. 5. Pour into the prepared pan. 6. Place in the refrigerator overnight to set. 7. Cut in small squares with a knife. Melt chocolate coating. Using a dipping spoon or a fork, coat each square with melted candy coating. Set on wax paper to harden.
