Pralines

6 ounce package of vanilla pudding
1-1/2 cups brown sugar, firmly packed
1/2 cup evaporated milk
1 teaspoon butter
2 cups pecan halves

1. Combine the pudding mix, sugar, evaporated milk, and butter in a large heavy saucepan.
2. Heat slowly on MEDIUM heat and stir until sugar dissolves. Wash down the sides of pan with a pastry brush dipped in hot water to remove sugar crystals. Add a candy thermometer.
3. Cook without stirring to 238 degrees F (soft ball stage).
4. Remove from heat. Stir in the pecans.
5. Beat with a wooden spoon 2 to 3 minutes, until mixture starts to thicken.
6. Quickly drop by tablespoonfuls, 2 inches apart on wax paper. (If mixture hardens as you work, set the pan over hot water.)
7. Allow to set. Store in a covered container.
