Sausage Bites

1 lb. pork sausages, andouille or other variety (approx. 4 links)
1/3 c. chopped onion
4 cloves garlic, divided
1 T. olive oil
1 c. cold water
1 T. flour
1 chicken bouillon cube or 1 t. concentrate (such as Better than Bouillon)
1/3 c. mango salsa
1 T. tamarind concentrate
2 T. honey mustard
1 T. brown sugar
1/4 t. ground cloves
1/2 tart apple, peeled and diced
1/2 c. raisins

Use a frying pan that has straight sides and a lid. Heat oil in frying pan. Cut sausages into 1/2" slices. Saute for about 8 minutes, turning sausage to brown evenly. Add chopped onion and squeeze two of the garlic cloves onto the mixture through a garlic press. Saute a few more minutes, stirring frequently.

Combine cold water and flour in measuring cup, stirring with a fork until lump-free. Pour into sausage mixture. Add bouillon, salsa, tamarind, mustard, sugar, cloves, apples, raisins, and two garlic cloves cut in halves. Heat, stirring constantly, until mixture boils. Boil for another minute. Reduce heat to low. Cover and simmer about 20 minutes, stirring occasionally.

Serve with cocktail picks. Makes about 36 bites. 1
