Omega Muffins

 

1 1/4 c. flour

1/4 t. salt

1 T. baking powder

3/4 c. ground flaxseed meal

1/3 c. brown sugar

2 1/2 c. raisin bran

1 1/4 c. milk

2 eggs

1/3 c. dried cranberries, fortified with Omega-3 fatty acids (available at Trader Joe's)

1/3 c. walnuts, coarsely chopped

 

Preheat oven to 400 degrees Fahrenheit.

 

Combine flour, salt, baking powder, flaxseed meal and brown sugar in a large mixing bowl.

In a separate bowl, combine cereal, milk, cranberries and walnuts. Let sit for 3 minutes.

Line 12 muffin cups with paper wrappers.

 

Beat eggs into cereal mixture. Pour into flour mixture and combine just until uniformly moistened. Spoon batter into muffin cups and bake at 400 degrees for 18 minutes.
