Loaf au Meat
2 medium eggs ½ tsp. dried sage
¼ cup Chardonnay ½ tsp. dried tarragon
1 Tbsp. Worcestershire sauce ¼ tsp. ground black pepper
2 tsp. Dijon mustard ½ tsp. salt
1 clove garlic, minced 1½ lbs. lean ground beef
¼ cup finely chopped onion 2 to 3 oz. blue cheese, crumbled
¾ cup dry bread crumbs 1 cup fresh spinach, chopped
Beat together all ingredients except meat, cheese, and spinach. Gradually add meat to
egg mixture until well combined. In 9x5" loaf pan, layer one third of the meat mixture,
half the cheese, half the spinach, then repeat, concluding with a meat layer. Bake at
350° for about an hour until no longer pink inside.
Meanwhile, prepare the topping:
3 strips bacon 1 Tbsp. Worcestershire sauce
1 small onion, thinly sliced salt as desired
Fry the bacon and remove from pan. Sauté the onion in bacon drippings until caramelized,
then crumble bacon into it and stir in Worcestershire. Spread on top of cooked meatloaf
and serve.
