Black & Red Chili |

1 lb. lean ground beef, turkey, buffalo and/or pork 1 medium onion, diced 1 red bell pepper, diced 4 cloves garlic, minced 1 T. chili powder 1 T. cumin 1 tsp. coriander 1 tsp. unsweetened cocoa 1/2 tsp. oregano 1/4 tsp. cayenne pepper 1/4 tsp. salt dash cinnamon |

28-oz. can crushed tomatoes 1 tsp. cider vinegar 1 T. peanut butter 1 15-oz. can small red beans, drained 1 15-oz. can black beans, drained 1 ear fresh corn, cut from cob |

Crumble beef into large nonstick saucepot or deep frying pan. Brown thoroughly with onion, pepper, garlic, and spices. Add tomatoes and vinegar, stir in peanut butter, then add beans and corn. Simmer at least 20 minutes.
Serve over pasta or rice, on tortillas, or with chips or crackers (I like it with Reduced Fat Cheese Nips.) Makes about 6 entree-sized servings. |
