When printing this page out it allows you to either keep the normal printout or the Card index image. This way with the Card index recipe you can cut around the image and then you will have your own recipe card to add to your recipe box collection. |

2 1/3 c. granulated sugar | 1/4 tsp. salt |
2/3 c. white corn syrup | 2 egg whites |
1/2 c. water | 1/2 c. chopped nut meats or cocoanut |
1/2 tsp. vanilla (I use at least 1 tsp. full) In a 2 qt. sauce pan combine first 4 ingredients | |
stirring well. Stir over low heat until sugar is dissolved, bring mixture to a boil & boil | |
1 minute or until all sugar crystales on side of pan have melted. If your using candy | |
themometer set in place. Continue gentle cooking without stirring to 265 degrees, or | |
until a little mixture dropped in cold water forms almost a brittle ball. Meanwhile in | |
large electric mixing bowl beat egg whites at high speed until stiff. Then slowly | |
pour syrup over whites, beating all the while. Continue beating until mixture loses it's | |
gloss & a small amount dropped from spoon holds its shape. Stir in nuts & vanilla. | |
Wrap by teaspoon on buttered pan. |
