PARMESAN SAUCE
2 tblsp nonfat dry milk powder 1 cup skim milk 1 ½ tblsp reduced calorie margarine 2 tblsp all purpose flour ⅓ cup freshly grated Parmesan cheese ¼ tsp ground nutmeg ¼ tsp white pepper
Combine first 2 ingredients; set aside. Melt margarine in a saucepan over medium heat; add flour and cook 1 minute, storing constantly. Gradually add milk and cook until thickened, stirring constantly with a wire whisk. Add Parmesan cheese, nutmeg and pepper; cook until cheese melts, stirring constantly. |
