BROCCOLI PARMESAN FETTUCCINE
2 cups broccoli flowerets 8 oz fettuccine, uncooked 2 tblsp butter or margarine 1 (6 oz) package Canadian bacon, cut into thin strips 1/3 cup whipping cream 1 ½ cups freshly grated Parmesan cheese ½ tsp salt ½ tsp ground pepper
Cook broccoli in boiling water for 3 minutes; drain and plunge into ice water. Drain and set aside. Cook fettuccine according to package directions; drain and place in large bowl. Melt butter in a large skillet over medium-high heat. Add bacon and cook, stirring constantly for 2 minutes. Stir in broccoli and cook 1 minute or until thoroughly heated. Add broccoli mixture, whipping cream and remaining ingredients to fettuccine; toss gently. Serve immediately. |
