Malts/Sugars:
   6.6 lbs Light Malt Extract Syrup (EXTRACT)
   0.5 lbs American Two-Row (STEEP)
   0.5 lbs Crystal  40L (STEEP)
   0.25 lbs Cara-Pils Dextrine (STEEP)

Hops:
   1.0 oz Amarillo 8% BOIL 60 minutes
   0.5 oz Amarillo 8% BOIL 30 minutes
   0.5 oz Amarillo 8% FINISHING 5 minutes

Procedure:
   - Steep the combined 1.25 lb crushed grain (in a bag) 
     in .5 to 1 gallon of water at 153F for 1 hour 
     (enough to cover the bag).
   - Top kettle with 5.83 gallons of water to yield 5.00 
     gallons to primary.
   - Water Absorbed by Grain: 0.00 gallons
   - Water Evaporated during boil: 1.00 gallons
   - Boil Time:  90 minutes total
   
SCHEDULE:
  - Steep for 1 hour @ 153F.
  - Raise temperature to 170F - mash out - remove grain.
  - Add water to 6.33 gallons total
  - Boil for ~90 minutes total.
  - 1 tsp gypsum @ 60 min.
  - 1.0 oz Amarillo @ 60 min.
  - 0.5 oz Amarillo @ 30 min.
  - 1 tsp. Irish Moss @ 10 min.
  - Immersion chiller @ 10 min.
  - 0.5 oz Amarillo @ 5 min.
  - Cool & ferment @ 62 - 68 F

Notes:

YEAST CHOICES: 
  The "classic" Chico American Ale Yeast - Wyeast 1056

MALT CHOICES:
  Liquid Light Malt Extract (syrup);
  40L Crystal; and Carapils Dextrine.
               
HOP CHOICES:
  Decided to experiment with the new Amarillo hops - 
  which are viewed as a Cascade-type in flavor/aroma, 
  but much higher in Alpha acidity (8% - 11%) - for 
  a total ~ 38 IBUs in this beer.  Described as:
  Citrus and floral. Ideal for bittering because of 
  higher alpha acid levels and prized for intense 
  flavor and aroma as well. 
  
ADDITIVES:
  - Gypsum: Increases calcium and sulfite levels in 
    soft water, increases acidity, and helps to settle 
    proteins during the boil. 
    Add 1 tsp at first hop addition.
  - Irish Moss: Fining agent - Add at 10 min to EOB
