Brew #47 - Daril's Scotty Dog Ale
11/4/2000 Daril's Scotty Dog Ale Category : Scottish Export Ale Method : Full Mash Starting Gravity : 1.050 Ending Gravity : 1.013 Alcohol content : 4.8% Recipe Makes : 14.0 gallons Total Grain : 25.00 lbs. Color (srm) : 15.7 Efficiency : 75% Hop IBUs : 22.1 Malts/Sugars: 21.75 lb. American Style Malt (M&F) 1.00 lb. Beechwood Smoked Malt 0.25 lb. Roast Barley 2.00 lb. Cara-Pils Dextrine Hops: 2.50 oz. L-Fuggles 5.5% 60 min Notes: GRAIN CHARACTERISTICS: Pale Ale Malt (3.4 L) constitutes 90%; Roast (600 L) 2%; and Carapils (8 L) 8% - are the recommended percentages for this style according to Daniels. Using roast barley and residual sweetness determines more what makes a Scotch Ale than does the yeast. In this recipe, I use 1 lb. of Beechwood Smoked Malt (2L). I would have preferred Scottish Peated Malt (8L), but it was unavailable at the time. The roasted barley, plus the smoked malt make up just over the recommended 2% of the grain bill. Do a long boil (90 minutes) for caramelization. Heat the wort to near-boiling while sparging/collecting. Should have minimal hop flavor, aroma & bitterness. HOPS: 2.5 oz. Whole-leaf Fuggles (5.5% AA) @ 60 min. ADDITIVES: 3 tsp. Irish Moss @ 15 min. Insert copper coil immersion chiller @ 10 min. YEAST CHOICE: For this brew, I'll use Munton & Fison Dry Ale yeast. I've had very good results with this before. An excellent alternative liquid yeast, which I've used before is Wyeast #1728 Scottish Ale yeast, described as "Ideally suited for Scottish-style ales, and high gravity ales of all types. Flocculation high; apparent attenuation 69-73%".
