Color (srm) : 16.4 Efficiency : 75% Hop IBUs : 32.5 Malts/Sugars: 2.00 lb. Special Roast (Biscuit) Malt 2.00 lb. German Wheat 23.50 lb. American Style (M&F) 0.50 lb. DWC Caramunich 1.00 lb. Cara-Pils Dextrine 1.00 lb. American Crystal 40L Hops: 2.50 oz. L-Cascade 6.0% 60 min 2.00 oz. L-Cascade 6.0% 30 min 1.00 oz. L-Cascade 6.0% 10 min 3.00 tsp. Irish Moss 15 min Boil temperature of water: 212F Grain Starting Temperature: 70F Desired Grain/Water Ratio: 1 quarts/pound Strike Water: 8.00 gallons of water at 176F First Mash Temperature: 154F Notes: HOPS: Whole-Leaf Cascade (6.0% AA) hops. YEAST DESCRIPTION: Wyeast #1056 - Ferments dry, finishes soft, smooth and clean, and is very well balanced. Temperature range: 60-72°F (optimum: 68°F). Apparent attenuation: 73-77%. Flocculation: low to medium. Source: Sierra Nevada (Seibel BRY-96)[and possibly the old Ballantine] American Ale II #1272 works very well for this beer. However, we'used Wyeast #1056 American Ale (Chico) this time simply because the #1272 was unavailable at the time I went shopping. Both are similar in that they are dty, soft, & clean.
