P-Cascade 8.0% 60 min 0.25 oz. Cascade 5.5% 60 min 0.75 oz. Centenniel 8.2% 60 min 1.00 oz. Fuggles 4.1% 40 min 0.50 oz. Tettnanger 4.3% 30 min 2.00 oz. L-HG-cascade 5.0% 20 min 2.50 oz. L-HG-cascade 5.0% 10 min Boil temperature of water: 212F Grain Starting Temperature: 65F Desired Grain/Water Ratio: 1 quarts/pound Strike Water: 8.25 gallons of water at 170F First Mash Temperature: 152F Notes: YEAST: Wyeast #1056 (Chico) American Ale Yeast Build a ~500 ml. starter. SCHEDULE: - Burton salts in the strike water. (3 tsp./5 gal.) = ~5 tsp or 8.25 gallons - Mash for 60 minutes @ 152 - 154 F. - Burton salts in the sparge water. (~6 tssp. for 10 gal) - Sparge - mash out at 170 F. - Collect ~14 gal. After reaching boil & hot break: - 2.00 oz Cascade pellets (8.0 AA) @ 60 min. - 0.25 oz Cascade pellets (5.5 AA) @ 60 min. - 0.75 oz Centenniel pellets (8.2 AA) @ 60 min. - 1.00 oz Fuggles plugs (4.1 AA) @ 40 min. - 0.50 oz Tettnanger (4.3 AA) @ 30 min. - 2.00 oz Cascade leaf (5.0 AA) Homegrown! @ 20 min. - 1 tsp Irish Moss @ 15 min. - Insert immersion chiller @ 15 min. - 2.50 oz Cascade leaf (5.0 AA) Homegrown! @ 10 min. - When finished, fish out as many hop bagss as possible, then start the chilling process. - When finished chilling - AERATE WELL !!!! - Pitch yeast @ 75 - 80 F.
