Boil temperature of water: 212F
Grain Starting Temperature: 70F
Desired Grain/Water Ratio: 1 quarts/pound
Strike Water:  5.38 gallons of water at 131F
First Mash Temperature: 120F
Second Mash Temperature: 153F
Boiling Water to add:  3.66 gallons 

Notes:

Use Wyeast #1318 London Ale III Yeast (high flocculation)
    Alternatives:  
                  Wyeast #1272 American Ale II (high flocculation)
                  Wyeast #1968 ESB (very high flocculation) 
- build a ~500 ml. starter.

SCHEDULE:
- Calcium chloride in the strike water. 
  (1/2 tsp./5 gal.) = ~.5 tsp for 5.38 gallons
                      ~.4 tsp for 3.66 gallons
- Dough-in at 120F - Rest for 15 minutes
- Raise by boiling water infusion to 153F  - Mash for 60 minutes
- Calcium chloride in the sparge water. (uuse 1.0 tsp. for 10+ gallons)
- Sparge - mash out at 170 F. -
  collect ~14+ gal.; then boil for 75 minutes.
- 2.0 oz Fuggles                    @ 60 mmin.
- 1.0 oz Fuggles                    @ 30 mmin. --
- 1 tsp. Irish Moss                 @ 15 mmin.
- 1.0 oz Fuggles                    @ 10 mmin. --
- 1.0 oz Fuggles (homegrown!)       @ 10 mmin. --
- Insert immersion chiller          @ 10 mmin.
- 1.5 lb Wildflower Honey           @ EOB
- Cool & ferment @ 65 - 70 F.        --- AERATE WELL !!! --

Note that if hop bags are used, allow for 10% LESS hop utilization
than if hops are NOT in bags.
