Color (srm) : 25.2 Efficiency : 65% Hop IBUs : 17.0 Malts/Sugars: 17.00 lb. Briess Pale Ale - 2-Row 2.50 lb. American Crystal 40L 0.50 lb. American Chocolate 1.50 lb. Honey Hops: 1.00 oz. Kent Goldings 6.5% 60 min 1.00 oz. Kent Goldings 6.5% 30 min Boil temperature of water: 212F Grain Starting Temperature: 70F Desired Grain/Water Ratio: 1.33 quarts/pound Strike Water: 7.15 gallons of water at 128F First Mash Temperature: 120F Second Mash Temperature: 153F Boiling Water to add: 4.65 gallons Notes: Notes: Use Wyeast #1318 London Ale III Yeast (high flocculation) Alternatives: Wyeast #1272 American Ale II (high flocculation) Wyeast #1968 ESB (very high flocculation) - build a ~500 ml. starter. SCHEDULE: - Calcium chloride in the strike water. (1/2 tsp./5 gal.) = ~.75 tsp for 7.15 gallons ~.45 tsp for 4.65 gallons - Dough-in at 120F - Rest for 10 minutes - Raise by boiling water infusion to 153F - Mash for 60 minutes - Calcium chloride in the sparge water. (uuse 1.0 tsp. for 10+ gallons) - Sparge - mash out at 170 F. - collect ~13 gal.; then boil for 75 minutes - 1.0 oz EKG plugs @ 600 min. - 1.0 oz EKG plugs @ 300 min. -- - 1.5 lb Wildflower Honey @ 200 min. - 1 tsp.
