Grain Starting Temperature: 70F

Strike Water:  7.25 gallons of water at 169F
First Mash Temperature: 152F

Notes:
Use Wyeast #1056 (Chico) American Ale Yeast
- build a 1/2 gal. starter.

SCHEDULE:
- Lactic acid in the strike water.
- Mash for 60 minutes at 155 F.
- Lactic acid in the sparge water.
- Sparge - mash out at 170 F. -
  collect ~13 gal.; then boil for 75 minutes
- 1.5 oz Centenniel pellets @ 60 min.
- 1.0 oz Cascade plugs      @ 40 min.
- 1 tsp. Irish Moss         @ 20 min.
- Insert immersion chiller  @ 15 min.
- 1.0 oz Cascade plugs      @ 10 min.
- Cool & ferment @ 65 - 70 F.
