Color (srm) : 20.0 Efficiency : 65% Hop IBUs : 25.8 Malts/Sugars: 0.50 lb. Scottish Peated 21.00 lb. Briess Pale Ale - 2-Row 0.25 lb. Roast Barley 2.00 lb. Cara-Pils Hops: 3.00 oz. Fuggles 4.6% 60 min Boil temperature of water: 212F Grain Starting Temperature: 70F Desired Grain/Water Ratio: 1 quarts/pound Strike Water: 5.94 gallons of water at 175F First Mash Temperature: 156F Notes: Pale Ale Malt (3.4 L) constitutes 90%; Roast (600 L) 2%; and Carapils (8 L) 8% - the recommended percentages for this style according to Daniels. Using roast barley and residual sweetness determines more what makes a Scotch Ale than does the yeast. Decided to toss in 6 oz. Scottish Peated Malt (8L), too. Mashed at 156F for 1 hour. Use a long boil (90 minutes) for caramelization. 2 tsp. Irish Moss @ 15 min. Should have minimal hop flavor, aroma & bitterness. 1728 Scottish Ale yeast Ideally suited for Scottish-style ales, and high gravity ales of all types. Flocculation high; apparent attenuation 69-73%. This beer is named "Jasmine's Scotty Dog Ale" because it was brewed at about the time we adopted our Scottish Terrier "Jasmine".
