Hops:

Boil temperature of water: 212F
Grain Starting Temperature: 65F
Desired Grain/Water Ratio: 1 quarts/pound
Strike Water:  6.38 gallons of water at 173F
First Mash Temperature: 154F

Notes:

Add ~0.50+ tsp. calcium chloride in the mash.

Mash at 154F for 1 hour.

Sparge Water - ~10 gallons @180F (allow for cooling to ~170 F)

Add another ~0.50+ tsp. calcium chloride in the kettle

Sparge - collect ~12 gallons. Start boiling after ~3 gallons have
         been collected.
 
Save residual runoff to compensate for boil-off, and to bring up to
13 gallons total by end of boil.

Use nylon bags for pelletized hops. (optional)

Schedule: 1st hops @ 60 min. - 3 oz. Liberty (4.4 AA)
          2nd hops @ 25 min. - 2 oz. Liberty (4.4 AA)
        Irish Moss @ 20 min. - 2 tsp.
   Immerse chiller @ 15 min.
          3rd hops @ 10 min. - 1 oz. EKG (5.8 AA)

Total boil time - 90 minutes.

Yeast:  Wyeast 1056 American Ale
Used commercially for several classic American ales.
This strain ferments dry, finishes soft, smooth and clean,
and is very well balanced. Flocculation low to medium;
apparent attenuation 73-77%. (60-72 F)

This beer is named "Double Eagle" Nut Brown Ale because it
was brewed by two Polacks - Mendyka & Mezynski.  Most Poles
know that the "Double Eagle" is the Polish national symbol.
