Middle Eastern Layered Pita Sandwich

2 lg (7 or 8") pita breads |
1 (8 oz.) container hummus |
1 med. carrot, shredded |
1 med. tomato, sliced |
½ med. cucumber, peeled if desired, sliced |
1 thin slice red onion, seperated into rings |

- Split pita breads to form 4 round pieces. Spread 1 pita bread half with 1/3 of hummus; sprinkle with half of carrots. Layer half of tomato slices, then half of the cucumber slices over the carrots.
- Top with second pita bread half. Spread 1/3 of hummus; add onion rings.
- Top with third pita bread half. Spread remaining hummus over pita. Top with remaining ingredients. Place final pita bread half on top. Press together gently. Cut into quarters.

Hummus is a mixture of chickpeas, tahini, lemon juice and garlic. Used in Middle Eastern cuisine as a spread, dip or sauce, hummus can be prepared from scratch or purchased ready-made. Hummus is sold plain, as well as flavored with ingredients such as roasted red peppers.
Pita bread is a flat, Middle Eastern pocket bread. Stuffed, it makes a perfect portable sandwich. For this recipe, the pita breads are split to form a layered sandwich.
