Peachy Hot Slaw

2 tbsp. oil |
¼ cup sliced green onions |
¼ cup chopped green bell pepper |
2 tbsp. sliced almonds |
3 tbsp. sugar |
3 tbsp. white vinegar |
4 cups purchased coleslaw blend |
2 peaches, peeled, chopped |

- Heat oil in large skillet or wok over medium high heat until hot. Add onions, bell pepper and almonds; cook and stir 3 to 5 minutes or until almonds are lightly toasted, stirring frequently. Remove mixture from skillet.
- Add sugar and vinegar to same skillet; cook and stir until bubbly. Remove skillet from heat. Add coleslaw blend; mix gently. Place mixture in serving bowl. Add almond mixture and peaches; toss gently to coat evenly.

Ingredient substitution:
One cup of chopped, drained canned peach slices can be used in the place of fresh peaches.
Kitchen tip:
To prevent fresh peaches from browning, toss them with lemon juice.
