Cucumber And Tomato Salad Caprese

1 lg. red tomato, sliced |
1 lg. yellow tomato, sliced |
1 med. cucumber, sliced |
8 oz. fresh mozarella cheese, sliced |
2 tbsp. extra virgin olive oil |
1 tbsp. lemon juice |
1/8 tsp. salt |
1/8 tsp. freshly ground black pepper |
1/3 cup coarsely chopped fresh basil or lemon basil |

- On large platter, arrange tomato, cucumber and cheese overlapping in a single layer.
- In small bowl, combine oil, lemon juice, salt and pepper; mix well. Drizzle over salad. Sprinkle with basil.

Recipe fact:
This salad is inspired by the classic Italian insalata caprese, named after the isle of Capri. Fresh mozzarella, ripe toamto and basil make up the traditional caprese salad; we added cucumber to giver our version a refreshing crisp texture.
Ingredient substitution:
Packaged, sliced mozzarella can be used in place of the fresh mozzarella. Cut the slices into 3" strips to fit between the layers of tomatoes.
Make it special:
Coarsely chopped, pitted kalamata olives make a nice garnish for this salad. Their assertive flavor and deep color contrast nicely with the milder components of the salad.
