Papaya-Colada Smoothies

1 papaya |
1 (8 oz.) can crushed pineapple in unsweetened juice, undrained |
1 pint (2 cups) nonfat vanilla frozen yogurt |
½ cup orange juice |
¾ tsp. coconut extract |

- Cut papaya in half; scoop out and discard seeds. Scoop flesh from skin into food processor bowl with metal blade.
- Add pineapple with juice; process until smooth. Add frozen yogurt, orange juice and extract; process until smooth.

Papayas are semitropical fruits that can weigh up to 20 pounds. The papayas in American grocery stores are grown in Hawaii or Florida, and weigh 1 to 2 pounds. When ripe, the silky smooth flesh is the same color as the outside of the papaya, a rich warm yellow. Greenish papayas will ripen quickly in a paper bag at room temperature.
The center of the papaya is stuffed with shiny grey-black edible seeds. The seeds have a nice, spicy-peppery taste. Try tossing the seeds with mixed fruit or mixed greens.
Storage tip:
Freeze leftover smoothies in an airtight plastic freezer container. Thaw frozen smoothies in the refrigerator, then stir them until they are smooth.
