Herbed Cheese Spread
Prep time: 15 minutes
1 (8 oz.) pkg. cream cheese, softened |
3 oz. (¾ cup) crumbled feta cheese |
2 tbsp. chopped fresh parsley |
2 tbsp. cut (1") fresh chives |
1 tbsp. fresh thyme leaves |
Dash coarse ground black pepper |
1 small garlic clove |
¼ cup finely chopped ripe olives |

- In food processor bowl with metal blade, combine all ingredients except olives; process until well blended.
- Stir in olives. Spoon into serving bowl. Serve with assorted crackers.

Thyme is a perennial herb that is a member of the mint family. Its tiny leaves have a spicy-lemony aroma. Popular in Mediterranean and French cuisines, thyme is one of the integral herbs in a classic "bouquet garni."
Feta cheese is the classic Greek cheese made from sheep's or goat's milk. Cured and stored in brine, feta has a tangy, salty flavor. Most American feta is made from cow's milk. Crumble it over salads and pasta dishes.
Healthy hint:
To reduce the fat in each serving of this cheese spread by about 2 grams, use light cream cheese. Serving the cheese with low fat crackers also cuts back on the fat.
