Fresh Tomato-Zucchini Salsa Crostini

Prep time: 10 minutes

2 med. tomatoes, chopped (1 cup) ½ cup finely chopped zucchini ¼ cup finely chopped green bell pepper
¼ cup sliced ripe olives 2 tbsp. chopped fresh basil ¼ tsp. garlic powder
1/8 tsp. salt 24 (¼") diagonal slices baguette-style French bread 1 tbsp. olive oil

  1. In medium bowl, combine all ingredients except bread and oil; mix well.
  2. Place bread slices on ungreased cookie shet. Drizzle each bread slice with oil. Broil 4 to 6 inces from heat for 30 to 45 seconds or until lightly toasted.
  3. To serve, top each toasted bread slice with about 1 tablespoon vegetable mixture.

Ingredient Info:
Purchase small zucchini, about the diameter of a quarter, with smooth, unmarked skin.

Ingredient Substitution:
To add color to the salsa, use yellow summer squash in place of all or part of the zucchini.
