Pork and Peppers
1 5 oz package Oriental curly noodles (or I used Angel Hair pasta)
1 pound pork tenderloin
3 T soy sauce, divided
1/2 C orange juice
2 T balsamic vinegar
1 T honey
2 t cornstarch
1/4 t pepper
Vegetable cooking spray
1-1/2 C red bell bell pepper
1-1/2 C cubed yellow bell pepper
( I also added green pepper, carrots sliced diagonally, water chestnuts, onions and mushrooms.)
Cook noodles according to package directions. Drain and set aside.
Cube pork into 3/4-inch cubes. Combine with 1T soy sauce and set aside.
Combine remaining soy with juice and next four ingredients, stir well, and set aside.
Coat skillet with non-cooking spray and warm over med.- high heat. Add pork mixture and stir fry until well browned - about 2 - 3 minutes. Remove pork and set aside. Add veggies and stir fry 2 minutes. Return pork to skillet. Add juice mixture and bring to a boil and stir constantly Add noodles, cook one minute or until heated. Serves 4.
