Spanish Bean Sou
Ingredients

1 onion, cut up                     
1 clove garlic, minced                     
1 tablespoon of bacon grease                     
2 cans of garbanzo beans with liquid                     
1 potato, cut up                     
1 package of saffron                     
2 bean cans of water                     
12 slices of pork sausage                     
ham hocks (2 or 3) or ham bone
Directions

1. Saute onion and garlic a few minutes in bacon grease
2. Add other ingredients, bring to a boil
3. Simmer gently for 1 hou
Plantains
Ingredients

1 large plantain    
Butter                     
Cinnamon                     
sugar                     
whipped crea
Directions

1. Peel and cut plantain in either strips or slices and fry slowly in butter until rather soft and golden in color.
2. Drain quickly and sprinkle with sugar and cinnamon mixture.
3. Serve HOT. Top with whipped cream or with a scoop of vanilla ice cream.

Pepper Steak With Sauteed Mushrooms
Ingredients

1/4 cup oil                     
1 pound beef tenderloin or sirloin tip                     
1 1/2 pounds fresh green peppers(4 or 5)                     
2 medium fresh tomatoes                     
1/2 pound fresh mushrooms                     
1 clove garlic, cut in slices                     
1 1/2 teaspoons oregano                     
salt and pepper                     
1/2 cup butter                     
1/4 cup sauterne                     
2 tablespoons tomatoe paste.
Directions

01. Cut tenderloin in 2" squares; slice into 1/4" slices.
02. Cut peppers in 1 1/2" squares, after cleaning out  centers.
03. Quater tomatoes, cut quarters in half.
04. Wash mushrooms in salted, luke-warm water; slice.
05. Cook peppers in oil. Put a few slivers of garlic in with the peppers. Sautee for 2 mins.
06. Cover pan and steam for 5 mins after adding half a teaspoon of salt, 1/4 teaspoon of pepper and oregano. Should be crisp tender.
07. In another pan, sautee mushrooms in butter until golden brown. add a few pieces of garlic, oregano and small amount of salt and pepper.
08. In third pan melt butter; add garlic slivers. Sautee meat, being careful not to over crowd the pan. Use High flame, Sauteeing 2 mins on each side.
09. Season with salt, pepper, and oregano.
10. Add 2 tablespoons of tomatoe paste and 1/4 cup of sauterne.
11. Combined peppers and mushrooms. Add fresh tomatoes; blend.
12. Simmer 3 to 4 mins over very low flame. Add meat.
13. Serve meat, gravey and vegetable over hot white rice.

Ingredients

2 tablespoons salad oil
1 bunch green onions (include some tops)
1 cup of celery
2 cups of cooked rice (cooked instant rice is OK)
2-3 tablespoon soya sauce
1/2 cup chopped bell pepper
Directions

01. Preheat oven to 350 degrees
02. Saute onions and celery in oil until onions are transparent
03. Add rice and Soya sauce. Brown about 5 minutes.
04. Mix and place in casserole dish. Add shrimp, chicken, turkey or ham if desired.
05. Bake 1/2 hour
