Monkey Pie


2 lb. ground beef
1 1/2 medium onions, diced
1 (15 oz)can corn or peas
6 servings instant mashed potatoes,
prepared 6 slices American cheese

Brown beef; add onion to the beef and cook until onion is transparent. Pour off excess fat.Grease lightly a casserole dish. Spoon the beef mixture in, then stir in corn or peas or half(71/2oz) of each. Pat the mixture flat and spread the prepared potatoes on top. Arrange cheese slices on top. Slide the monster into a 350 oven and bake for 15 to 20 mins. Serves 6.



Pink Salad


1 can Eagle Brand milk
1 large Cool Whip
1 can cherry pie filling
1 small can crushed pineapple, drained
1 cup walnuts

Mix Eagle Brand and Cool Whip until thick. Add remaining ingredients. Freeze in covered bowl. Thaw for 30 minutes before serving.



"Stir- Fried Green Beans"


1 tbsp oil
1 9 oz pkg frozen green beans, thawed
1 chicken bouillon cube
1/4 cup boiling water
2 tbsp sliced green onion
1/4 tsp salt
1 tsp cornstarch

Heat oil in a 10 inch skillet. Add beans;cook,stirring frequently, 3 mins. Dissolve bouillon in boiling water. Add to beans with onion and salt.Cover; cook till beans are tender, 3 to 5 mins. Blend 1 tbsp cold water into cornstarch; add to beans. Cook, stirring, till vegetables are coated. Makes 4 servings.



Green Beans w/Shallots & Red Bell Pepper


2 lbs. fresh green beans
1/3 cup butter or margarine
3 large shallots chopped
1 large red bell pepper,
cut into thin strips
1 tsp kosher or table salt
1/2 tsp pepper
1/2 tsp garlic powder

Cook beans in boiling water to cover in a Dutch oven 3 to 4 mins, or until crisp tender; drain. Melt butter in Dutch oven over med-high heat. Add shallots and bell pepper, and saute 4 mins or until tender. Add beans; toss with salt,pepper, and garlic powder. (6 servings)



Pennsylvania Dutch Salad


1 small head lettuce, washed and chilled 5 oz.
spinach, washed and chilled
2 hard-cooked eggs, coarsly chopped
1/2 cup chopped celery
1/2 cup bottled Italian salad dressing

Just before serving, tear lettuce and spinach into bite-size pieces (about 6 cups) into bowl.Add eggs, celery and dressing; toss 5 to 6 servings.



CREAMY RICE PUDDING
THIS IS MADE IN A CROCKPOT;


2 1/2 CUPS MILK
1/4 CUP SHORT-GRAIN RICE
1/4 CUP SUGAR
1 TBSP BUTTER
GRATED NUTMEG

PUT MILK RICE,AND SUGAR IN SAUCEPAN;BRING TO A BOIL,STIRRING.POUR INTO CROCKPOT,DOT WITH BUTTER AND SPRINKLE WITH A LITTLA GRATED NUTMEG.COVER,COOK ON LOW FOR 5 HOURS STIRRING OCCASIONALLY SERVES 4



BASIC CHEESE SAUCE


2 TO 3 TBSP BUTTER
2 TO 3 TBSP FLOUR
1 CUP MILK
1/8 TSP PEPPER
1/4 TSP SALT
1/2 CUP SHARP AMERICAN OR CHEDDAR CHEESE,GRATED THICK;
4 1/2 TBSP BUTTER
4 1/2 TBSP FLOUR
1 CUP MILK
1/8 TSP PEPPER
1/4 TSP SALT
1/2 CUP SHARP AMERICAN OR CHEDDAR CHEESE,GRATED

MELT THE BUTTER OVER LOW HEAT IN A HEAVY SAUCEPAN.BLEND IN FLOUR.COOK OVER LOW HEAT ABOUT 2 MINUTES,STIRRING CONSTANTLY,UNTIL MIXTURE IS SMOOTH AND BUBBLY.STIR IN PEPPER AND SALT.REMOVE FROM HEAT.STIR IN MILK GRADUALLY, RETURN TO HEAT,BRING TO A BOIL.BOIL 1 MINUTE-STIRRING CONSTANTLY.STIR IN CHEESE UNTIL MELTED.



Party Cake


Bake a white or vanilla cake
in a 13x9 inch pan;
cool completely.
Combine 4 to 6 cups of sliced strawberries and raspberris
and 1/4 cup sugar,
stir well to slightly break up fruit,and set aside
for at least 30 mins.

Spoon berries and juice over cake and set aside for at least 2 hours for juices to soak into cake.

   Whip 2 cups heavy cream with 2 tbsp sugar. Just before serving, top cake with cream and decorate with blueberries.



Honey Mustard Marinade


1/2 cup honey
1/2 cup Dijon mustard
1/4 cup lemon juice
1/4 cup soy sauce
2 garlic cloves pressed

Combine all ingredients. Marinate chicken in the refrigerator 2 to 8 hours before grilling, or marinate pork tenderloin in refrigerator 8 hours before grilling. Yield 11/3 cups.



Bacon Monkey Bread


11 bacon slices, cooked and crumbled
1/2 cup grated parm. cheese
1 small onion chopped
3 (10oz)cans refrigerated buttermilk biscuits
1/2 cup butter or margarine, melted

Combine first 3 ingredients. Cut each biscuit into fourths. Dip one-third of biscuit pieces into melted butter, and place in a lightly greased 10 inch Bundt pan.Sprinkle with half of bacon mixture. Repeat layers with remaining biscuit pieces and bacon mixture, ending with biscuit pieces. Bake at 350 for 40 mins or until golden. Cool bread in pan 10 mins; invert onto a serving platter, and serve immediately. Yield;1(10-inch) loaf.



Potatoes Romanoff


4 large white potatoes, peeled and cubed
4 large green onions chopped
1/2 cup sour cream
1/2 cup cottage cheese (small curd)
1/4 cup mayo
salt and pepper to taste

Cook potatoes and onions in water until fork tender. Combine sour cream, cottage cheese and mayo and pour over drained potatoes Toss lightly bake at 325 for 1/2 hour.Sprinkle with parsley flakes and paprika.



Stuffed Pepper Soup


2 lbs.ground beef
1 can (28oz) crushed tomatoes
1 can (28oz) diced tomatoes
1 onion chopped
2 cups chopped bell peppers,red or green
1/4 cup brown sugar
1 qt.beef stock
salt and pepper to taste
2 cups cooked rice (2/3 cup dry)

in a large saucepan brown the beef.Drain off the fat and add the remaining ingredients.Bring to a boil;reduce heat and simmer 40 mins or until peppers are tender.Top each bowl withshredded cheddar cheese. Mm-Mm-Good!



Asparagus Casserole


2 tbsp margarine
2 tbsp flour
1/2 tsp salt,dash of pepper
2 cups milk
4 hard-cooked eggs,sliced
1/4 cup cracker crumbs
2 tbsp melted margarine
2 lbs. fresh asparagus(4 cup)
trimmed,cut crosswise in
1 1/2 pieces and cooked.

Melt 2 tbsp margarine,blend in flour;salt and pepper.Add milk all at once,cook,stirring until mixture bubbles and thickens.Arrange half the cooked asparagus and all the egg slices in the bottom of an 8x8x2 inch baking dish.Add half the white sauce.Top with remaining asparagus and sauce.Toss crumbs with margarine;sprinkle on top.Bake at 350 for 30-35 mins.Serves 6.



Ham or Lamb Patties


1 lb. ground ham or lamb
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup unflavored bread crumbs
a splash of milk
a little flour
olive oil for frying

Mix the ingredientd together. I read somewhere the patties will hold together better if you add a little flour,especially if you have little fat in ground meat.It worked for me,but makes the meat brown more readily. Anyway,mold into patties and fry in enough oil to keep them from sticking.Turn,and ck\ook until done. (Mint jelly with the lamb,mustard sauce with the ham).



Baked Smoked Mozzarella


Serves 2 as an appetizer or light lunch.
1 tbsp olive oil
3 garlic cloves thinly sliced
1 lb. spinach,washed and dried
salt to taste pepper
1 lb.smoked mozzarella cut into 1/4 inch slices
4-6 lemon leaves
Extra-virgin olive oil to drizzle over finished dish.
Preheat oven to 375.

In a large saute pan,heat the oil.Add garlic and saute gently.Add the spinach and saute until the spinach begins to wilt and is tender, about 2 mins.Add salt and pepper. Lightly oil an 8 inch baking dish.Add spinach and layer mozzarella slices over the spinach.Layer lemon leaves over the cheese.Cover dish with foil and place in preheated oven for 15 mins. To serve,divide dish onto two plates.Put pepper over each serving and drizzle with the oil. Serve immediately.



Bunk

Simmer together for 1/2 hour;
1 lb. browned hamburger
1 (24oz) can spaghetti sauce
1 tall can sliced mushrooms,drained
salt and pepper
Mix;

1 (8oz) pkg cream cheese
1/2 pt.sour cream
2 bunches chopped scallions

Cook;1/2 lb. noodles.any width,drain. Combine in layers;Noodles;spread 1/2 cheese mixture; meat sauce;REPEAT;finish with meat sauce;top with 1/2 cup grated cheddar. Bake at 350 for 1/2 hour.



Sweet and Sour Red Cabbage
3-4 slices bacon,cut up
1 lg.head red cabbage
1/4 cup sugar salt and pepper to taste
4 med.apples,pared and sliced
1/2-1 cup water
1/2 cup vinegar

Fry the bacon until almost done.then add the apples.Cook until the apples are transparent.Add thinly sliced cabbage,water,salt and pepper,sugar and vinegar.Bring to a boil and simmer until the cabbage is tender.Then fry until the liquid is gone.



Welsh Cookies
1 Cream together 1 cup shortening
and 1 1/2 cups sugar. 2. Add 2/3 cup sour milk or buttermilk
beaten up with 2 eggs
3.Add dry ingredients which have been mixed together;
4 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp nutmeg
1/2 tsp salt
1 cup dried currants

Fold these ingredients into the shortening,egg,milk and sugar mixture. 4.Roll out onto a floured board until dough is about 1/4 inch thick.Cut out with a three inch round cookie cutter.If you dont have one,cut both ends out of a tuna can. 5. Fry the cookies on a greased griddle like the Welsh do,or use a heavy frying pan.The maintaining of constant heat is important,and takes some experimentation.An electric frying pan is ideal.




Cabbage Goulash
1 lb.pork sausage
1 lb.ground beef
1 large onion chopped
1 28 oz can diced tomatoes
1 6 oz can tomato paste
2 tbsp vinegar
1 tbsp chili powder
1 tsp garlic powder
1/4 tsp crushed red pepper
salt to taste
10 cups shredded cabbage

Brown sausage,beef and onions (I use a heavy Dutch oven).Add everything else except the cabbage.Mix well.Stir in cabbage and simmer until cabbage is tender.



Penne with Onions and Broccoli
1 cup diced onions
1 tsp minced garlic
1 tbsp olive oil
b1 lb. penne pasta,cooked
1/2 lb.broccoli broken into florets and cooked juice of 1
lemon 1` tbsp capers
1/8 tsp ground red pepper (or to taste)

In a 10 inch non-stick skillet over med. high heat,cook the onions and garlic in the oil,stirring frequently,until they are tender and golden brown, 5 to 7 mins. Add the pasta and broccoli and cook frequently stirring,until the mixture is heated through,2 to 3 mins.Add the lemon juice capers and pepper and mix well. Serves 4 .
