Buttermilk Fudge


2 cups Sugar
1 cup buttermilk
1/2 cup butter
1 tbsp corn syrup
1 tsp. baking soda
1 tsp vanilla
1/2 cup walnuts (or pecans)

Combine sugar, buttermilk, butter, corn syrup, and baking soda. Cook over med-low heat, stirring constantly until butter melts and sugar dissolves. Use a brush dipped in hot water to wash the sugar crystals off the side. Increase heat to med and boil. DO NOT stir while boiling. Continue to cook to soft ball stage (234° to 240° on a candy thermometer). Remove from heat . Do not stir until cooled down to 200°. Add Vanilla.
Using an electric mixer, beat until fudge is thick and no longer glossy. Stir in the nuts. Pour into a 8"x8" buttered pan. Cool. Cut into squares.
