120g sardines, packed in brine
1 tbsp reduced-fat mmayonnise
2 tbsp finely chopped chives
1,5 tsp Dijon mustard
a bit of Tabasco
10 slices toasted French bread
1 tbsp finely grated Parmesan
lemon juice, to serve

- Preheat the grill. In a bowl, combine the drained sardines, mayonnaise, chives, mustard and Tabasco.
- Mash with a fork until the mixture is almost smooth. Spread thinly on each of the bread slices, then dust each one with the Parmesan cheese.
- Put the slices under the grill and cook for about 5 minutes until they are golden and puffed. Serve sprinkled with fresh lemon juice and chopped chives.
