One-Dish Meals

Beef Corn Chowder

1 lb ground beef
1/2 cup chopped onion
3 cups diced potatoes
17 oz can cream-corn
10 1/2 oz beef broth
3/4 cup water
1/3 tsp salt
1/4 tsp basil
dash of pepper

Brown beef and onion; drain. Transfer to crockery cooker.
Stir in remaining ingredients. Cover.
Cook on hight 3 to 4 hours.
Stir before serving.
Sprinkle with shredded cheese. (Optional)

Makes 6 to 8 servings.

This is great on a cold winter's evening, served with hot biscuits!!

Cheeseburger - Vegetable Casserole

1 lb ground beef
1/2 cup chopped onion
1/4 cup butter
1/4 cup flour
1 tsp salt
dash of pepper
1 can (Evaporated) Milk
1 1/2 cups shredded cheddar cheese
1 tsp Worcestershire sauce
10 oz can peas & carrots
Prepared instant mashed potatoes (enough for 4)

Microcook beef and onion, covered, for 5 minutes.

Micromelt butter 45 seconds.
Stir in flour, salt and pepper. Stir in milk.
Microcook, uncovered, 1 minute. Stir.
Microcook 3 minutes, stirring "EVERY" 30 seconds, 'til thick.
Stir in 1 cup cheese and Worcestershire sauce.

Add meat and onion. Stir in peas and carrots.
Microcook covered, 10 minutes.
Spoon potatoes around edge.
Microcook uncovered, 1 minute.

Makes 4 servings.

"Hungarian" Short Ribs

4 lb beef short ribs
2 tbsp cooking oil
2 medium onions, cut up
14oz tomato sauce
1 cup water
1/4 cup brown sugar
1/4 cup vinegar
1 tsp salt
1 tsp dry mustard
1 tsp Worcestershire Sauce
6oz (dry) broad egg noodles

Brown ribs in hot cooking oil. Add onions.
Blend remaining ingredients (EXCEPT THE NOODLES)
Pour over meat. Simmer 2 - 2 1/2 hours or 'til tender.

Stir in noodles with 1 cup water.
Cook and stir occasionally 15 to 20 minutes.

(Note: You can sub cubed stewing beef for the short ribs!)
