Egg Nog

2 eggs, separated
5 1/2 cups milk
1 4-serving size instant vanilla pudding mix
1/4 cup sugar
1 tsp vanilla
1/4 teaspoon nutmeg

Beat egg "whites" 'til stiff peaks form
Combine "yolks" and remaining ingredients; beat smooth.
Fold in whites.
Chill.
Pour into glasses.
Sprinkle with additional nutmeg, if desired.

Makes 8 (6 oz) servings.


Spiked Egg Nog

Prepare as above except use "only" 5 cups milk and add 1/2 cup rum.

Christmas Gumdrop Cake

1 cup margarine
8 oz cream cheese, softened
1 1/2 cups sugar
1 3/4 cups flour
1 1/2 tsp baking powder
1 tsp vanilla
4 eggs
salt
1 lb gumdrops
1/4 cup flour

Cut up the gumdrops in the 1/4 cup flour, stir together well.
Cream together margarine, cream cheese, sugar and vanilla.
Mix 1 3/4 cups flour, baking powder and salt.
Add the eggs to the creamed mixture, one at a time with the flour mixture.
Mix thoroughly. Batter will be quite stiff.
"DO NOT" add any more flour.

Bake in greased and floured tube (angel food cake) pan
90 - 110 minutes (at least 90 minutes)
at 325 F

This gumdrop cake is "fool proof".
The gumdrops "NEVER" sink to the bottom!

Candy Cane Cookies

3/4 cup butter
3/4 cup sugar
1 egg
1/2 tsp vanilla
1/2 tsp peppermint extract
2 cups flour
1/2 tsp salt
1/4 tsp baking powder
1/3 cup coconut
Red food colouring

Cream butter and sugar; beat in egg, vanilla and peppermint.
Stir in flour, salt and baking powder.
Divide dough in half.
Stir coconut into 1 half and food colour into the other.
Chill for 30 minutes.
Divide EACH half into 30 balls of equal size; keeping 1/2 of each chilled.
Roll each ball into 5-inch rope.
For each cane, twist one rope of each colour together, pinch ends.
Place on ungreased cookie sheet.
Curve to form cane.
Repeat to form each cane.
Bake at 375 F for approximately 10 minutes.

Makes 30 cookies.

Just Lovely Macaroons

1/2 cup butter
32 marshmallows
1/2 tsp almond extract
4 cups cornflakes
1/2 cup chopped nuts
1/2 cup candied mixed fruit

Melt butter and marshmallows together.
Remove from heat and stir in almond extract.
Add cornflakes, nuts and fruit, tossing until all is evenly coated with the mallow mix.
While still warm, drop by spoonful onto waxed paper.
Keep in a cool dry place.

These crunchy cookies are rich and colourful,
and make a delightful addition to
any holiday sweet tray!

Sugar Plums

Marshmallows
Warm Milk
Coloured Sugar

Dip marshmallows in warm milk.
Roll in coloured sugar.
