The digestion of a complex aliment happens through further secretions of digestive juices, that are suitable for the digestion of each food. The rice has the less high rate of proteins and its digestion will be carried out with a minor risk of fermentation than the other cereals and, above all, than legumes. On the other hand, for its high rate of starch it will give a bigger difficulty for digestion to change starch molecules into sugar.
