Wholemeal cereals in seeds, flakes and flour
from Biological and Biodynamic cultivations

OAT (avena sativa) gives Energy to Liver and Gall bladder: it tones up muscles, it is excellent for thyroid; it contains phosphorus, magnesium, calcium, enzymes and is extremely good for all istances of psychical and muscular fatigue. It is suitable also for children.

SPELT (Triticum dicoccum) similar to wheat.

WHEAT (Triticum sativum) gives Energy to Liver and Gall bladder: grain contains gluten (glutenine and gliadine), that’s why the wheat paste can undergo the fermentation without decomposing; moreover it contains cellulose (from 2.1 to 2.5%), minerals (approximately 2%), such as above all potassium, phosphorus and calcium and finally, enzymes facilitating its assimilation. The germ contains also phosphorus, magnesium, calcium, trace elements and vitamins B1, B2, PP, B5, B6, D and E. It is the cereal with the highest alimentary value and is taken as grains, pasta, semolina, cous cous, bread, pizza, cookies and so on...

BUCK WHEAT (Fagopyrum aesculentum) of the Family of the Polygonaceae gives Energy to Kidneys and Bladder:
excellent in the cold climate because it develops heat; it is beneficial for kidneys, it fortifies the blood and it is suitable in all istances of vascular weakliness.
MAIZE (Zea mays) gives Energy to the Heart and small Intestine:
extremely good for tyroid and the heart; it is an energetic tonic . It is spread among rural populations and is excellent as polenta (corn-meal mush) with undercooked vegetables and the stockfish.
 
MILLET (Panicum miliaceum) gives Energy to the Spleen, Pancreas and Stomach:
Being the most alkaline cereal, it is really suitable for the blood acidity; thanks to its content of Lecithin it is a precious food for stressed and weak people; it is also fit for all spleen diseases and, moreover, it stimulates the elimination of water in excess in the cellular tissues (cellulitis); it improves the complexion, it strengthens hair, nails and helps the teething.
 
BARLEY (Hordeum to vulgare) gives Energy to the Heart and Small Intestine:
it is excellent for calcification, suitable also for babies and children; rich in phosphorus, it strengthens nervous cells, moreover as emollient it is proper to the inflammatory process of the digestive and urinary apparatus.
 
RICE (sativa Oryza) gives Energy to Lungs and Large Intestine:
energetic and very nutritious for the balanced composition of its elements - starches, proteins, mineral salts, vitamins, fats and nitrogenous substances -; beneficial for the nervous system, the hypertension and the allergies; the germ (wholemeal) contains the phytic acid that helps to void toxic substances.

RYE (Secale cereal) similar to wheat but with a smaller content of starches and proteins; an excellent stimulant for the intestine thanks to its mild laxative action.

Cereals are complex food, and have a highrer percentage of starches than a weak percentage of proteins.

The digestion of a complex aliment happens through further secretions of digestive juices, that are suitable for the digestion of each food. The rice has the less high rate of proteins and its digestion will be carried out with a minor risk of fermentation than the other cereals and, above all, than legumes. On the other hand, for its high rate of starch it will give a bigger difficulty for digestion to change starch molecules into sugar. The fats are in very small amounts both in cereals and legumes and they will play a minor role during the digestion.
