ON MAKING THE CHRISTMAS CAKE
Every year it happens exactly the very same thing,
Out of the oven a flat I cake can never seem to bring,
However deep the hollow on the cake mixture I make
There is always a nice raise, never flat my lovely cake.

I do not cook it too fast, never ever cook it too slow,
The right ingredients and measure right I always show,
In the correct place in the oven so what does go wrong?
I think my heart thinks of rising as I bake merrily along.

Many suggestion come my way I have tried them all,
Even up a lip on top and that rose the highest I recall,
Suggestions from the family depending on their taste,
Make it flat with extra icing or the rich almond paste.

The suggestion that most common it to cut it flat,
Make some hot chocolate and have a little chat
While we sample the Christmas cake ahead of time
We do that most often stating that the cake is just fine.
