LEMON MERINGUE PIE
There is something special about a lemon meringue pie,
Not only does it look delicious to the hungry man’s eye,
It is both sweet and tangy, well balanced at the same time,
And to let it sit a little too long is to me a really bad crime.

When first seen come out of the oven it has to be left to set,
It should not be put warm into the fridge or it will sweat,
It is eyed by all who come into the kitchen, give it a shake,
It will be ready in it’s own good time for goodness sake.

Meal time is here the main meal all eaten quite fast I see,
Apple or lemon meringue pie, what a choice that is for me,
A little of each would be perfect, but I’ve made more apple pie,
So for me the choice is quite easy as the apple plate I pass by.

I have not yet found a way of freezing lemon meringue away,
For the egg whites would go all rubbery, that’s what they say,
So I’ll just keep on making them by ones and watch them drool
As it comes out of the oven and they have to wait for it to cool.
