Kimch'i
Perhaps the best-known Korean food is kimch'i. It is served at every meal. though it most often refers to a spicy cabbage mixture, kimch'i is actually a generic term for any seasoned and fermented vegetable dish -- with cabbage, turnip, radish or cucumber and sometimes fish as the main ingredients. It is a mixture of crushed red pepper, garlic, salt, water and the vegetable they are using.
