Cookie Recipes

Hint: When baking cookies, it is always best to get them off the hot cookie sheets quickly when they come out of the oven. Place them on a wire rack to cool.

Grandma's Chocolate Chocloate Chip Cookies

Ingredients:

  • Devil's Food Cake Mix
  • 1 egg
  • 1/4 cup water
  • 1/2 cup butter
  • 1/2 cup shortening
  • 1/2 cup brown sugar
  • 2 cup oats (like Quaker oatmeal oats)
  • 1 package chocolate chips
Directions:

Preheat oven to the 350° to 375° range
Beat egg, water, butter, shortening, sugar, and 1/2 of cake mix until smooth.
Stir in remaining cake mix, oats, and chocolate chips.
Using soup spoon drop batter onto greased cookie sheet.
Bake 6 - 7 minutes.

Want to make this recipe a tiny bit less high in fat? Try substituting applesauce for the shortening. We have never tried it, but this is a common practice in high fat dessert recipes, so it might work.

Special note: When we say this is Grandma's recipe, we really mean it. This recipe came from Joyce Goodrich who passed it down to her daughter who passed it on to her husband and their daughters.

John's Custom Low-fat Oatmeal Chocloate Chip Raisin Cookies

Ingredients:

  • Moist
  • approx. 3/4 cup applesauce or 1 banana
  • 1/2 cup brown sugar
  • 1/4 cup water
  • 1/3 - 1/2 cube butter (softened)
  • 1/2 cup honey
  • 1 egg
  • 1 teaspoon vanilla
  •  
  • Dry
  • 3 cup oats (like Quaker oatmeal oats)
  • 1 cup flour (whole wheat pastry is best)
  • 1/2 teaspoon baking soda
  • 1 teaspon cinnamon (if you like it)
  • 1/4 teaspoon nutmeg (if you like it)
  • 1 cup (or whatever) raisins
  • 1/2 bag (or more) chocolate chips

Directions:

Preheat oven to the 350°

In a large mixing bowl, mix dry ingredients using a wooden spoon or an electric mixer on low speed.

In a separate (smaller) bowl, blend fruit, softened butter, sugar, honey, egg, and vanilla. This is best done with an electric mixer

Add moist ingredients to dry mixture ad mix well (electric mixer on medium speed).

Stir in raisins and chocolate chips.
Spoon onto greased or non-stick cookie sheets.

Bake 12 - 15 minutes.


These cookies should hve less than 1 gram of fat per cookie. It should produce at least 4 dozen cookies.
