The Village Kitchen Archives

This first recipe is from a favourite cookbook of mine - what else? - British Cooking! Anyways, it may sound weird at first, but if you taste it, it is so delicious. It is from the 19th century, when Indian things were in style. Many of the recipes were not authentic, but they are still very good.

Curried Eggs

8-12 eggs
1 onion
butter
2 tsp curry powder
15g (a few tablespoons? I don't really know) of flour
275 ml chicken stock
150 ml double cream
salt & pepper
juice from 1/2 lemon
1 tsp curry paste (opt)
paprika

Chop onion and fry it in the butter (don't let it brown). Add curry powder and fry gently for a minute, stirring well. (Always fry curry powder to eliminate taste of raw turmeric). Stir in flour, add stock slowly and the cream; simmer for 15 minutes, covered. Meanwhile, hardboil the eggs for 10-12 minutes, peel and keep warm. Cut eggs in half, put in a heated dish. Season sauce with salt, pepper, lemon juice and curry paste; pour over the eggs. Sprinkle with paprika and serve over rice. (I recommend using brown rice). Serve with salad and or a light broth soup and or green vegetables such as broccoli or snow peas.

My family and friends all think it is a very good dish. So try it!!!

This next one is for a very easy, simple pizza dough - of course, the toppings are up to you.

Easy Pizza Dough--makes 2 pizzas

3 cups all-purpose flour
3 tsp baking powder
1-1/2 tsp salt
1 cup milk
3/8 cup olive oil (or canola, etc)
3 tbsp olive oil (optional, for brushing)

Preheat oven to 425 Fahrenheit. Mix all ingredients except last measure of oil in a mixing bowl and stir vigourously. Press it into a ball and knead it ten times. Divide it in two parts. On a board lightly dusted with flour, roll out each of the lumps into a circle to fit the pans. Turn up and pinch the edges. If desired, brush them with the last measure of oil. Arrange sauce and toppings, and bake for 20 to 25 minutes.

This makes a very nice crust with a biscuity texture.
