Pasta Primavera
1 | lb | Noodles | Cooked al dente |
2 | ea | Carrots | |
1 | ea | Onion | Chopped fine |
1 | cup | Parmesan | Grated |
1 | cup | Swiss Cheese | Shredded |
1/2 | lb | Mushrooms | Small, chopped |
3 | Tbsp | Olive Oil | |
3 | ea | Tomatoes | Chopped |
1/2 | cup | Cauliflower | Flowers |
1/2 | cup | Broccoli | Flowers |
2 | Tbsp | Oregano | |
1/2 | cup | Green/Red Peppers | Sliced |
1 | Tbsp | Garlic | Minced |
Stir fry vegetables in olive oil. Toss in pasta, seasoning and Swiss cheese, mix briefly and serve.
