Minestrone
1 | lb | Sausages | Italian. Can be replaced by beef chunks. |
1 | lb | Tomatoes | Chopped. |
1 | lb | Beans | Canned. |
2 | ea | Onion | Cut in large pieces. |
1 | cup | Celery | Chopped. |
2 | cups | Shell Pasta | Dry |
2 | ea | Potatoes | Large, peeled and cut in large pieces |
2 | ea | Carrots | Large, peeled and chopped |
1 | ea | Red Pepper | Cut in large pieces. |
2 | cloves | Garlic | Crushed |
2 | ea | Beef cubes | |
1 | cup | Red wine | Table |
1 | Tbsp | Oregano | Dried |
1 | cup | Parmesan | Grated |
Cut
sausages into 1" pieces. Sauté sausages in medium heat, about 6 min. Add
pepper, onion and celery and sauté for another 6 min. Add 4 cups of water and
all the other ingredients. Bring to boil, then reduce heat and simmer covered
for about 20 min.
