Hummus
A great vegetarian spread
1 | lb | Chick Peas | Canned |
2 | oz | Lime | Juice |
3 | cloves | Garlic | |
3 | Tbsp | Tahini | Sesame seed paste |
Salt & Pepper | |||
1 | Tbsp | Olive Oil | |
1 | pinch | Paprika | |
Parsley | Fresh, to garnish |
Combine chick peas, lime juice, garlic, "tahini", and 1/3 cup of the chick pea liquid in a blender or food processor. Blend to a smooth, creamy paste. Taste and add more lemon juice, salt and pepper to taste. It should be the creamy consistency of mashed potatoes. Thin with chick pea liquid or water if necessary. Scrape into serving bowl. Colour olive oil with a bit of paprika. Drizzle oil over the surface in a decorative pattern and sprinkle with some parsley leaves. Serve with crackers and or raw vegetables (carrots, broccoli, cauliflower, celery, etc.) cut in small pieces.
