Gnocchi


1 Kg.  Potatoes   
 1 cup  Flour   
 2 ea  Egg   
    Salt   

Cook and mash the potatoes.  Cool, mix with eggs and flour.  Add salt.  Knead into a rolls. Cut into 1 inch pieces on a floured board so they don't stick to each other.  Boil in abundant salted water, removing them as soon as they float. 

Serve with preferred sauce and and Parmesan to taste.
