Cod Soup
1 | lb | Cod | Cut in chunks. |
1/2 | cup | Cabbage | Chopped |
1 | cup | Onions | Chopped |
1/2 | cup | Celery | Chopped |
1/2 | cup | Carrots | Chopped |
3 | ea | Fish cubes | Can use chicken cubes instead.. |
2 | Tbsp | Margarine | |
2 | tspn | Salt | |
Spices | A pinch each: pepper, basil, thyme and rosemary |
Sauté celery and onion in margarine until tender. Stir in seasoning cubes, cabbage, carrot and spices. Bring to boil, then reduce heat to low and let simmer for 5 - 8 minutes until vegetables are almost tender. Cut fish in 1 inch pieces. Add fish to vegetables. Increase heat just to boiling and then reduce again and let simmer, covered, for about 3 minutes. Serve with croutons.
