Cod Patties


The Portuguese "bolinhos de bacalhau." 

 1 lb  Cod  Salted and dried
 1 lb Potatoes  
4 ea  Eggs   
 1 ea  Onion  Grated 
1 bunch Parsley Fresh
    Vegetable Oil   

Cut cod in pieces and soak overnight to remove salt. Wash and give a quick boil. Cook potatoes and mash well. Remove skin and bones of cod and break down the flesh into small flakes.  Mix cod, potatoes and seasoning.  Add the eggs, one by one, always mixing, until dough binds properly.  Make small balls, about 1" wide and 2" long. Deep fry in hot oil until golden. Drain oil and serve.
