Chicken Soup (Canja)
This is a family recipe, passed down from my great-grandmother Isabel do Valle.
1 | ea | Chicken | About 4 pounds, clean |
1 | cup | Carrots | Diced |
2 | ea | Seasoning Cubes | Chicken |
1 | cup | Rice | |
1 | tspn | Salt | |
1 | bunch | Mint | Fresh |
Cook chicken with the chicken cubes. Let cool and remove skin and bones. Add rice, carrots, and and cook until rice is ready (about 15 min). Wash mint and cut in individual leaves.
Serve adding mint leaves to taste. Crush mint to release flavor.
