Caesar's Pasta Salad
4 | cups | Lettuce | Coarsely shredded |
4 | cups | Pasta | Penne or Rotini, cooked |
1/4 | cup | Lemon | Juice |
1/2 | cup | Olive Oil | Extra virgin |
3 | cloves | Garlic | Minced |
6 | fillets | Anchovies | |
1 | tspn | Salt | |
1/4 | cup | Parmesan | Grated |
1 | tspn | White Pepper | |
1 | tspn | Lemon rind | Grated |
Just mix everything together. Serve with croutons (see below).
Croutons:
2 | Tbsp | Olive Oil | Extra virgin |
4 | Slices | Bread | Italian, thick slices. |
6 | slices | Bacon | |
Salt and Pepper |
In skillet, cook bacon until crisp. Drain. Crumble coarsely and set aside. Brush 2 tablespoons of olive oil on both sides of bread. Cut into 1/2 inch cubes; toss with 1/4 teaspoon each of the salt and pepper. Toast on baking sheet at 350F (180C) for about 10 minutes or until golden and crisp.
