Apple Pie
Dough:
1 1/2 | cup | Flour | |
1 | tbsp | Baking powder | |
1/2 | cup | Sugar |
Mix all ingredients and make a roll. Save about 1/3 for the top. Lay dough on baking pan.
Filling:
1 | cup | Sugar | |
1 | ea | Egg | |
1 | ea | Yolk | |
4 | cups | Apples | Peeled and sliced (save peels and cores) |
1 | tspn | Lemon peel | Grated |
Cook slightly apple slices in a little water. Remove liquid to another pan and add the apple peels and cores and the grated lemon peels. Cook until soft and then sieve to remove the solids. Add sugar to the liquid and cook on high fire to make the jelly. Lay apple slices on dough, cover with the apple jelly and cover with thin dough rolls in a cross pattern. Paint with egg yolk and bake until golden.

Half bake the crust. Let cool. Meanwhile put milk, sugar, yolk and starch in a pan and cook until thick (stirring). Place milk mixture over cool crust. Place the apple slices and cover with the jelly. Cover with crossed thin dough rolls. Paint with yolk and bake until golden.
