Potato, Pork, and Onion Stew

1/4 lb. pieces salt pork or bacon, well rinsed and cut into 1/4 inch slices
2 onions, cut into 1 inch pieces
2 Tbs. all purpose flour
4 large bay leaves
1 tsp. dried thyme leaves
1/4 cup dry white wine
2 lbs. potatoes, scrubbed and cut into 2 inch pieces
4 cups chicken stock or water
1/4 tsp. sweet paprika
2 tsp. fresh chives, minced


Cook salt pork about 8 minutes in a heavy saucepan over medium heat, until crisp. Stir in onions and cook 3-5 minutes, stirring occasionally until softened.
Stir in flour, bay leaves and thyme. Increase heat to high. Pour in wine and stir to deglaze pan. Simmer 2-3 minutes, until liquid has almost evaporated.

In a stew pot, combine potatoes, stock and pepper to taste. Cover and bring to a boil. Add pork mixture. Reduce heat to low and simmer 45 minutes, until potato pieces are starting to break up. Remove and discard bay leaves. Serve sprinkled with paprika and chives.

Serves 4 grown men, 2 Aurochans, or 10 street kids.
