Uncle Buck and his wife Genieva, built a small cafe onto the front of their cottage at the camp. It was not unusual to find the customers behind the grill cooking if need be. The place was full of adventure and excitement when we visited as children and later as adults.
My Uncle Buck was a wonderful man. He always came to the dinner table with a dress shirt on. He wore a hat when he went outside regardless of the heat. He loved women young, old, fat, or skinny, and had a passion for baseball. At 83, before he passed away, Uncle Buck was still handsome, flirtacious, yet genteel. He was the essence of a southern gentlemen.
Here is a favorite recipe my uncle gave me for making banana bread. It's quick and easy. You can add spices as you like to taste.
